JP, spoon kosher-certified shop with seven stores in and around Boston, is known for its high quality, at home (and sometimes outrageously flavored) ice cream. But what many do not realize is that they are very particular about their coffee – where it comes from, how it tastes and how to roast.



In February being "Specialty Coffee Month", JP Licks' passion for and commitment to coffee growers Coffee is highlighted through their limited edition offering of Fair Trade Organic (FTO) Nicaragua coffee, which comes from the Promoter of Cooperative Development of Las Segovias (PRODECOOP) based in the Segovia region of northern Nicaragua and has 40 co-operatives.



PRODECOOP was established in 1993 to assist members of families in sustainable production and marketing of their coffee. Its revenue from sales of fair trade, social support, and many quality control programs, including: primary and secondary school scholarships and books, a revolving fund that provides social assistance to disaster relief, health care and housing, a program that organic production has increased its production of certified organic coffee significantly improved processing equipment and the creation of a quality control to maintain their high standards.

When it comes to fair trade coffee, JP Licks insists on several factors before partnering with a producer price, environmental sustainability, fair labor conditions, direct trade, community development and organic farming.

"When our coffee comes from and how they get is so important to us as how our coffee tastes. We are proud to be "fair" … fair to our employees, our customers with fair and just with people who grow the coffee they roast, "says the enigmatic founder of JP Licks, Vince Petryk.

In order to ensure high quality and consistent flavor in every cup of coffee, JP Licks insists his roasted beans in their Jamaica Plain store and has been doing since 1999. FTO Nicaragua is a medium roasted coffee … not too dark, not too light, but fair.
